Easy One-Bowl Vegan Banana Bread

Veganized version of the classic loaf of banana bread!

Banana bread is the most classic baked good that we all make when we’ve got over ripe bananas. For the first few months that I was vegan, I didn’t make any baked goods in fear of them failing. But, I eventually decided to try to veganize the most basic (and my favorite) baked good: banana bread! To my surprise, it turned out even better than the non-vegan banana bread!

I’ve always been a fan of plain banana bread with a light spread of butter and nothing fancy. But, you can totally feel free to use any add-ins that you’d like, like nuts, chocolate chips, dried fruit, etc. before baking!

– is super easy to make (with very few dishes to clean after!)

– tastes so delicious

– uses up those over ripe bananas laying around

– and tastes good either hot out of the oven or chilled the next day!


Easy One-Bowl Vegan Banana Bread

Veganized version of the classic loaf of banana bread!

Prep Time: 10 mins – Cook Time: 1 hr – Yield: 1 loaf (7-8 thick slices)

Ingredients:

– 3 ripe bananas

– 1/2 cup melted vegan butter

– 1/3 cup plant milk (I used soy)

– 1 tbsp lemon juice

– 1 tsp vanilla extract

– 2 tbsp ground flax seed

– 2 cups flour (all-purpose or whole wheat works best)

– 1/2 cup white sugar

– 1/4 cup brown sugar

– 1 tsp baking powder

– 1 tsp baking soda

– 1 tsp cinnamon

– 1/2 tsp salt

– fillings of choice (approx. 1/2 cup or 3/4 cup works best)

Instructions:

  1. Preheat your oven to 350° 
  2. In a large bowl, add the three bananas and mash them with a fork.
  3. Then, add the melted butter, milk, lemon juice, vanilla extract, and ground flax. Allow to sit for 5 mins.
  4. Now, add the rest of the ingredients to the bowl and mix until thoroughly combined.
  5. Add batter to a lined or greased loaf pan and place in the oven.
  6. Bake for 50-60 minutes, or until the loaf has risen and you can stick a butter knife into the loaf and it comes out clean.
  7. Remove from the oven and let the loaf cool in the pan for 10-15 minutes.
  8. Then remove from the pan, slice, and enjoy!
