I don’t know about you, but waffles are my ULTIMATE comfort food! So fluffy, warm, and fun to make! Plus, I’m down for anything that you get to drown in a lake of maple syrup.
I’ve never had a Pumpkin Spice Latte or been too fall obsessed, but I do enjoy a pumkpin flavored goodie every once and a while. These waffles were the perfect, easy and delicious fall-time pumpkin fix for me, and I think you’ll love them too!
These waffles are:
– Fluffy
– Crispy on the outside
– Full of your favorite fall flavors (cinnamon, nutmeg, pumpkin…)
– Easy to make
– And soooooo scrumptious!

1-Bowl Vegan Pumpkin Spice Waffles
Your go-to fluffy, festive, and delicious fall-time breakfast!
Prep Time: 5 mins – Cook Time: 5 mins (per waffle) – Yield: 6-7 waffles
Ingredients:
– 1 cup pumpkin puree
– 1 tbsp oil of choice
– 1 cup nondairy milk (I used soy)
– 2 tbsp brown sugar
– 1 cup whole wheat flour
– 1 tsp baking powder
– 1/2 tsp baking soda
– 1 tsp cinnamon
– pinches of: salt, allspice, ground ginger, and nutmeg
– 1/2 tsp vanilla extract
– toppings of choice (I used walnuts, bananas, and maple syrup)
Instructions:
- In a large bowl, mix all of the wet ingredients together.
- Add the brown sugar to the wet ingredients. Brown sugar can be difficult to break apart due to the molasses, so be vigorous.
- Add all of the rest of the ingredients to the large bowl of wet ingredients.
- Heat up your waffle maker.
- Add a spoonful of batter in the center of the waffle mold (every waffle maker is different, so experiment and see what amount and method works best for you).
- After approx. 4-5 mins, open up your waffle maker. If the waffles(s) looks browned and crispy, remove it from the waffle maker. If it is still liquidy, give it another 2-3 mins and check again.
- While your other waffles are cooking, feel free to keep the already cooked waffles in the oven at 300 degrees to keep them warm.
- Once all of your waffles are cooked, just plate, top, and enjoy your waffles!
