Vegan Pumpkin Spice Baked Oats

Cozy and flavorful way to start off any fall or winter day!

Prep Time: 5 mins – Cook Time: 35-40 mins – Yield: 1-2 servings

Ingredients:

– 1 cup oats

– 3/4 cup pumpkin puree

– 1/2 cup milk of choice (I used unsweetened soy milk)

– 2 tbsp maple syrup

– dash of nutmeg

– dash of ginger

– dash of allspice

– pinch of salt

– 1/4 tsp vanilla extract

– 1/4 tsp cinnamon

– 3/4 tsp baking powder

Instructions:

  1. Preheat your oven to 375°.
  2. Add your oats to a blender or food processor and pulse until the oats are almost a flour (should still have a few larger pieces).
  3. Then, add your oats and all of the rest of the ingredients to an oven safe bowl.
  4. Stir until all of the ingredients are combined.
  5. Place in the oven and bake for 35-40 mins.
  6. Remove from the oven once cooked and serve! I suggest adding some nuts, yogurt, and a dash of cinnamon on top.
