I’ve finally jumped onto the baked oats bandwagon!! Trying out baked oats has been life-changing and I’m totally obsessed now! Baked oats are so delicious that I knew that I needed to share my favorite kind with you all: pumpkin spice flavored. After the rush of all things pumpkin in fall, I still had a can of pumpkin puree in the back of my pantry just waiting to be used. As soon as I saw that can, I knew that I had to use it to make some baked oats! So, I put all of my pumpkin knowledge into creating this incredible pumpkin spice baked oats recipe!

– and can be made in either a single-serving container or in a big batch to save for later!

Vegan Pumpkin Spice Baked Oats
Cozy and flavorful way to start off any fall or winter day!
Prep Time: 5 mins – Cook Time: 35-40 mins – Yield: 1-2 servings
Ingredients:
– 1 cup oats
– 3/4 cup pumpkin puree
– 1/2 cup milk of choice (I used unsweetened soy milk)
– 2 tbsp maple syrup
– dash of nutmeg
– dash of ginger
– dash of allspice
– pinch of salt
– 1/4 tsp vanilla extract
– 1/4 tsp cinnamon
– 3/4 tsp baking powder
Instructions:
- Preheat your oven to 375°.
- Add your oats to a blender or food processor and pulse until the oats are almost a flour (should still have a few larger pieces).
- Then, add your oats and all of the rest of the ingredients to an oven safe bowl.
- Stir until all of the ingredients are combined.
- Place in the oven and bake for 35-40 mins.
- Remove from the oven once cooked and serve! I suggest adding some nuts, yogurt, and a dash of cinnamon on top.
