Perfect potato dish for all of your carb-y and garlic-y needs!
Over the holidays my family and I would always make mashed potatoes and mashed potatoes only. I love mashed potatoes, don’t get me wrong, but WOW smashed potatoes are my new favorite! I will definitely be making these ALL THE TIME from now on since they’re so delicious and so much fun to make (smashing potatoes is a blast)!
What’s great about this recipe is that you can customize it to your flavor profile of choice! I used olive oil, garlic, and rosemary, but you can use any herbs and spices of choice to go well with the rest of your meal. You can use some smoked paprika and sea salt for a fun spicy potato dish, some curry powder/tikka masala mix for a yummy Indian potato side dish, or whatever your heart desires!

Vegan Garlic Rosemary Smashed Potatoes
Perfect potato dish for all of your carb-y and garlic-y needs!
Prep Time: 5 mins – Cook Time: 30 mins – Yield: 10 smashed potatoes
Ingredients:
– 10 small gold/yellow potatoes
– 4 cloves of garlic; minced
– 1 tsp sea salt
– 2 tbsp olive oil
– 1/2 tbsp dried or fresh rosemary; minced
Instructions:
- Fill a large pot half-way with water and place on medium-high heat.
- Once the water comes to a boil, add the potatoes (whole) to the water and boil for ~15 minutes, or until they’re almost soft (we want to leave them slightly undercooked as they will continue to cook in the oven).
- Remove potatoes from the pot and place on a lined baking sheet.
- Preheat your oven to 425°
- With a large serving spoon or ladle (concave side up), press firmly in the center of each potato until smashed to your desired level.
- Now, with a food brush, brush each potato with olive oil (just the side facing up) and then sprinkle on the salt, garlic, and rosemary.
- Now, place the tray of potatoes into the oven for 10-15 minutes, or until they’re soft all the way through and the tops are browned and crispy.
- If the tops aren’t as crispy as you’d like, put the oven on “broil” and bake for another 2-3 minutes (keep a close eye on them as they will burn easily at such a high temperature).
- Remove from the oven and serve! Enjoy!
