The creamiest and coziest mashed potatoes you’ll ever lay your eyes on!
If this recipe doesn’t scream cozy-holiday-night-watching-festive-movies-by-the-fire-with-loved-ones, then I don’t know what does, because these mashed potatoes are the most cozy food and I have never met anyone who wasn’t obsessed with this recipe! I had always just been a plain butter and salt mashed potatoes kind of gal before I tried this recipe out, and I am never going back!
These may taste like five-star restaurant quality, but don’t be fooled, they are super easy to make! These mashed potatoes also:
– have a creaminess level of 102920108
– taste like buttery heaven (without the dairy)
– are packed with all of the delicious garlicyness you could ever ask for
– and are so perfect for the fall and winter time holidays!

Vegan Garlic-Herb Mashed Potatoes
Your go-to holiday side dish for allll the festive vibes!
Prep Time: 7 mins – Cook Time: 20 mins – Yield: 6-8 servings
Ingredients:
– 5 medium russet potatoes; diced into 1/2″ cubes
– 4 cloves of garlic; minced
– 1 tbsp vegetable oil
– 1/2 tbsp sage (dried or fresh)
– 1/2 tbsp thyme (dried or fresh)
– salt to taste (I recommend ~1tsp)
– 3/4 cup unsweetened plant milk (I used soy milk)
– 1/2 cup vegan butter (+ more to-taste if you’d like)
Instructions:
- Bring a large pot of water to a boil on medium-high heat. Add potato pieces and cook for ~20 mins, or until the potato pieces are very soft.
- While the potatoes are cooking, add the oil, garlic, and herbs to a pan on medium heat.
- Cook until the garlic begins to brown and/or the aroma is strong. Once finished, remove from the heat.
- Once the potatoes are cooked, strain the water (and return the potatoes to the pot if you took them out to strain). Then, with a potato masher (or hand-held blender if you want them to be super smooth), mash your potatoes to the level of your liking.
- Turn the pot with the potatoes back onto low heat and add the garlic-herb mixture, salt, milk, and butter. Stir until the butter is melted and everything is well incorporated.
- Remove from the heat, let cool for a minute or two, and enjoy!
