Vegan Crispy Chickpea and Tahini Lettuce Boats

Protein packed, light, and delicious lunch for my fellow chickpea-obsessed humans!

One day I was making my favorite super crunchy chickpea snacks but was too impatient to wait for them to cook all the way. So, I tried some before they were done and wow they were amazing! I decided to take my impatience and turn it into a positive by making a yummy meal out of these chickpeas! So, I made these lettuce boats that I know you will love!

You can add whatever you’d like to these boats, but I personally added some fresh red bell peppers and some orange-tahini sauce. To make the tahini sauce, I simply added a tablespoon of orange juice to half a cup of tahini, stirred, and bam there you have it!

Vegan Crispy Chickpea and Tahini Lettuce Boats

Protein packed, light, and delicious lunch for my fellow chickpea-obsessed humans!

Prep Time: 5 mins – Cook Time: 10 mins – Yield: ~5 lettuce boats

Ingredients:

– 1 (15 oz) can of chickpeas; drained

– 1 tbsp vegetable oil

– 1/2 tsp salt

– 1/2 tsp garlic powder

– 1/2 tsp paprika

– 1/4 cup tahini

– 5 large lettuce leaves

Instructions:

  1. In a large bowl, add the chickpeas, oil, and spices. Mix so that all of the chickpeas are evenly coated.
  2. Then, place the chickpeas in your air fryer at 400° and cook for 10-15 minutes, or until the chickpeas have reached your desired level of crispiness.
  3. Remove from the fryer once cooked and place about 1/5 of the chickpeas and any toppings you desire into one lettuce boat. Repeat for all lettuce boats.
  4. Serve and enjoy!
