
Spicy and flavorful sandwich for game night, Saturday grill out, or a lazy night in.

It took me years (after going vegan) to try making seitan for the first time. I though to myself “how can flour and water turn into chicken?!” Believe it or not, it can! And it tastes amazing. As soon as I tried it and came to the conclusion that it does indeed taste like chicken, I wanted to make the chicken-based item that I missed the most since going vegan: a good ol’ chicken sandwich. Given my recent obsession with buffalo sauce, I decided on a buffalo chicken sandwich.
Let’s dive into some info about our star ingredient seitan:
– I made seitan using the “washed flour method” where you make a dough ball and wash most of the starch out (using water) until you have a ball of pure gluten protein. After extensive research, this seemed like the easiest and fastest method so that’s what I went for. If you’re looking for any specific texture, flavor, or outcome there’s a seitan-making method for it out there.
– Gluten has protein?! Yep! Gluten has protein. In fact, a single serving (depending on how much starch you wash out) can have 40g of protein. This plant-based protein may not be best for those with gluten intolerances, but its an amazing alternative for those who can’t enjoy or tolerate soy products (which dominate the plant-based protein market).
– What can I make with seitan? Depending on the technique and flavorings used, seitan can turn into virtually any mock meat you desire. It can be roast beef, pulled pork, shredded chicken, chicken nuggets, holiday roasts, ground beef, and so much more.

Ingredients:
– 3/4 cup seitan; formed into a patty
– vegetable oil (amount depends on the size of your
frying pan)
– 1/2 cup all purpose flour
– 3/4 cup plant milk
– 4 tbsp buffalo sauce
– 1 tsp garlic powder
– 1 cup breadcrumbs
– 1 tsp onion powder
– 1 tsp paprika
– burger bun
– toppings of choice (lettuce and onion work very well)
Instructions:
- In a pan on medium heat add vegetable oil until it lightly covers the bottom of your pan. Then, place your seitan patty (should be pre-steamed) on the pan and cook for 1-2 mins on each side or until lightly browned and warm through to the center.
- While that is cooking, add the flour, milk, 2 tbsp of buffalo sauce, and garlic powder to a small bowl and mix until combined with no lumps.
- To another small bowl, add the breadcrumbs, onion powder, and paprika.
- Now, remove the seitan patty from the pan and add more vegetable oil to the pan (should be a few millimeters deep).
- Dip the seitan patty into the wet mixture (cover completely and let the excess drip off for a few seconds), then into the breadcrumbs (cover all sides completely; you might not use all of the breadcrumbs), and then place into the pan.
- Cook the patty on medium-high heat for about 4-5 mins on each side (or until each side is browned and crispy).
- Then, remove from the pan, place on the burger bun, and top with the remaining buffalo sauce and your toppings of choice.
- Place the top bun on top and enjoy!
