The perfect side of veggies for a wide variety of plant-based dinners!
It can be quite difficult to motivate to eat raw vegetables and salads, but I know that I am much more inclined to have a side of veg with my meal if they’re cooked and flavorful! So, I tend to roast veggies very often to get maximum flavor and an easiest digestibility. Here’s my most recent favorite way to roast them!

– leaves you with only 2 dishes to do,
– and, of course, tastes incredible!!

Vegan Balsamic Roasted Carrots and Cauliflower
The perfect side of veggies for a wide variety of plant-based dinners!
Prep Time: 7 mins – Cook Time: 45 mins – Yield: 1 pan of veggies (~3-4 servings)
Ingredients:
– 1/3 cup balsamic vinegar
– 1/4 cup olive oil
– 1 tsp salt
– 1/2 tsp cracked pepper
– 3-4 springs of rosemary (optional)
– 1/2 a head of cauliflower; florets removed and cut in half
– 2 large carrots; peeled and cut into 8 pieces
Instructions:
- Preheat your oven to 375°.
- In a large bowl, combine the vinegar, oil, salt, and pepper.
- Then, add the veggies to the bowl and toss until they are all evenly covered.
- Place the vegetables on a lined baking sheet and add the springs of rosemary (just place them wherever you’d like, they’re just an additional garnish and a little bit of a flavor booster).
- Place the baking sheet in the oven and bake for 35-45 mins, or until the vegetables have reached your desired level of softness.
- Remove from the oven once cooked and serve! Enjoy!
