Vegan Balsamic Roasted Carrots and Cauliflower

The perfect side of veggies for a wide variety of plant-based dinners!

It can be quite difficult to motivate to eat raw vegetables and salads, but I know that I am much more inclined to have a side of veg with my meal if they’re cooked and flavorful! So, I tend to roast veggies very often to get maximum flavor and an easiest digestibility. Here’s my most recent favorite way to roast them!

Ingredients:

– 1/3 cup balsamic vinegar

– 1/4 cup olive oil

– 1 tsp salt

– 1/2 tsp cracked pepper

  1. Preheat your oven to 375°.
  2. In a large bowl, combine the vinegar, oil, salt, and pepper.
  3. Then, add the veggies to the bowl and toss until they are all evenly covered.
  4. Place the vegetables on a lined baking sheet and add the springs of rosemary (just place them wherever you’d like, they’re just an additional garnish and a little bit of a flavor booster).
  5. Place the baking sheet in the oven and bake for 35-45 mins, or until the vegetables have reached your desired level of softness.
  6. Remove from the oven once cooked and serve! Enjoy!
