Coziest and most nostalgic dessert full of delicious caramelized and cinnamony apples!
Pop tarts are undoubtedly the most popular and best childhood treats, but unfortunately they aren’t vegan. So, I decided to veganize the apple pie flavor and omg they taste so good! The dough is a little more puffy and flaky than the original pop tarts, so it resembles more of the McDonalds apple pies, but either way they are so delicious!
These are so much simpler than you’d think to make, and they’re a great party or potluck food since you can make them single serving sizes! I tried to make mine pop tart shape and size, but you can feel free to get creative and make these in whatever size(s) and shape(s) you like! This is so much easier than your average apple pie too, since you don’t have to make or roll out any dough and they cook so much faster!

Vegan Apple Pie Pop Tarts/Hand Pies
Your new favorite dessert for all of the yummy and nostalgic vibes!
Prep Time: 6 mins – Cook Time: 30 mins – Yield: 3 large pies (4″x6″)
Ingredients:
– 1 pack vegan puff pastry
– 1 1/2 gala apples; chopped into 1/2″x1/2″ pieces
– 2 tsp cinnamon
– 1/2 tsp nutmeg
– 1 tbsp lemon juice
– 1 tbsp cornstarch
– 2 tbsp brown, cane, or coconut sugar
– 1 tbsp water
– 2 tbsp melted butter
Instructions:
- Preheat your oven to 425°
- Add all ingredients (besides cornstarch and puff pastry) to a sauce pan on medium heat.
- Bring to a boil, then reduce the heat and stir regularly until almost all of the water has evaporated.
- Then, turn the heat off and add cornstarch. Stir until cornstarch is incorporated, and then let sit for 5-10 mins.
- While you’re waiting, cut your puff pastry into six rectangles about 3” x 5” (not all puff pastry is the same size, so your pack might have enough for more or less than six rectangles, all that matters is that you make an even number of rectangles).
- Once filling has cooled, use a potato masher to gently mash your filling to a chunky applesauce type of consistency. Then, add 3 tbsp of filling to half of your rectangles.
- Then, for each rectangle with filling, find a rectangle without filling and place that on top of the rectangle with filling. Then, use a fork to gently crimp the edges.
- Next, use a food brush (if you don’t have one, your fingers will do) to brush a thin layer of melted butter on the top side of each pie.
- Place in the oven for 8-12 mins, or until the puff pastry has risen and is as brown as you desire (puff pastry burns easily, so be sure to keep a close eye on them).
- Remove from the oven, let cool for 3-7 mins, and enjoy! (I frosted mine this time, but I honestly think they taste best without frosting).
