Cozy and hearty porridge recipe for all of your fall-time festive needs!
I’ve had quite an interesting experience with oats. I used to eat rolled oats every morning with the same exact toppings. Pretty monotonous and boring. Oats always kind of made my stomach hurt and just wasn’t my favorite way to start the day. I knew I had some digestive issues and finally decided to start listening to my body. So instead of rolled oats, I tried to replicate the porridge I had in Scotland that hadn’t hurt my stomach. It turns out, I had to use instant oats!
Even though they’re often called microwave oats, you don’t have to microwave them or get them will all of those added sugars and flavorings! I still cook my oats on the stove and top them with delicious and natural toppings, and it even makes me feel so much better!
Ok that was a bit of a rant, but I just wanted you to know all about my relationship with oats so that you can understand just how dedicated I was too find a recipe that worked for me. Now you can enjoy your oats too!

Cinnamon-y and Delicious Apple Pie Oats
The coziest way to start the day!
Prep Time: 3 mins – Cook Time: 15 mins – Yield: 1-2 servings
Ingredients:
– 1 apple; cut into 1/4″ cubes
– 1 cup of oats
– 1 cup of water
– 1 cup of plant milk (I used soy)
– 1 tsp cinnamon
– 1 tbsp maple syrup
– 1 tbsp lemon juice
Optional Additions:
– 1 pinch of nutmeg
– 1 pinch of allspice
– 1/2 tsp vanilla extract
Instructions:
- Add apple, lemon juice, and cinnamon to a pot on medium heat. Cook for 4-7 mins, or until the apples are soft.
- Turn the heat down to low and add all of the rest of the ingredients.
- Cook for 5-10 mins, or until oats are cooked to your liking.
- Serve and enjoy!
