Tropical Mango Lime Salsa

Looking for a fresh and vibrant salsa to add to tacos, salads, burritos, and more? Look no further, this salsa has it all!

Whenever my mom would make tacos when I was younger, she would make this delicious mango salsa to top our tacos with (and I would make a mean guacamole). Hers used honey (and lots of it), so I decided to make a veganized version with less sweetener! This recipe only requires a couple of ingredients, and trust me it will elevate every taco, burrito, nourish bowl, or salad that you eat!

As someone who is a big fan of fruit in my savory dishes (I ALWAYS need fruit in my salads, and I love adding grilled fruit to main dishes as well), slathering everything in this tangy and sweet salsa just makes sense! If you’re not someone who often adds fruit to your savory meals, I’m sure this salsa will get you a one-way ticket to fruity deliciousness town (let’s just pretend like that worked and actually rolls off of your tongue).

Tropical Mango-Lime Salsa

The ultimate taco topping for a pop of sweetness and tang!

Prep Time: 5 minutes – Yield: 1.5 cups

Ingredients:

– 1 mango; cut into cubes around 1/4″ or 1/2″

– 2 tbsp finely diced red onion

– juice of 1 lime

– 2 tbsp roughly chopped cilantro

– 1 pinch of salt

– 1-2 tbsp maple syrup (to taste; depends on your sweetness preference)

Instructions:

  1. Simply add all of your ingredients to a small bowl and mix. Add more of any ingredient to taste, and feel free to add some chili for a little bit of a kick!
  2. Enjoy on top of anything from tacos and burritos to salads and nourish bowls!
