Spicy Thai Hummus (vegan, gf, df)

Spicy and flavorful chickpea-based spread for dipping, adding to sandwiches (see photo to the left), or whatever your heart desires!

Prep Time: 5 mins – Yield: ~1 cup of hummus

Ingredients:

– 1 can of chickpeas (15 oz); rinsed

– 1/4 cup creamy peanut butter

– juice of 2 limes

– 1 tbsp rice vinegar

– 1/2 tsp sesame oil

– 1/4 tsp salt

– 4 cloves garlic

– 1 tbsp sriracha (suggested amount; add more or less depending on your taste and desired spice level)

Instructions:

  1. Add all of the ingredients to a food processor and blend until smooth.
  2. Taste and determine if you desire more spice. If so, add more sriracha (1 tsp at a time) and continue to blend until the flavor is perfect.
  3. Serve and enjoy! (I love this hummus on sesame crackers and tofu & veggie sandwiches).
