Shiitake-Hoisin Bao Bun Filling

The most flavorful and delicious hoisin and soy sauce filling for your fluffy bao buns!

Something about bao buns is just so comforting and wholesome to me. Maybe its the fluffy steamed buns that feel so cozy (especially since I love all things bread), or maybe its the burst of umami and savory goodness that the filling provides. Whatever it is, I want to share that feeling with you all, so here’s my recipe!

For the buns themselves, I used the recipe from http://tastingtable.com , which turned out so delicious and surprisingly weren’t difficult to make (although you should have seen the contraption that I had to build to steam them)! The only bao buns I have ever had are ones I’ve made, so I’m not claiming for these to be traditional ingredients or flavors, but they’re what I’ve tried and enjoyed, so I want to allow you guys to make them too!

This filling is:

– full of strong umami flavor

– bold

– meaty (without the meat!)

– and pairs perfectly with the subtle flavor of the buns!


Shiitake-Hoisin Bao Bun Filling

Mushrooms that pack a punch!

Prep Time: 5 mins – Cook Time: 10 mins – Yield: Filling for ~5 buns

Ingredients:

– 1/4 cup soy sauce

– 1 tbsp vegetable oil

– 1/2 tsp sesame oil

– 1 tbsp hoisin sauce

– 10 shiitake mushrooms; sliced

– 3 cloves of garlic; minces

– 2 tsp maple syrup (optional, only if you would like to add more sweetness)

– 1 tbsp minced ginger

– 1 tbsp water

Instructions:

  1. To a pan on medium heat, add the vegetable oil, sesame oil, ginger, mushrooms, and garlic. Cook for 2-3 mins.
  2. Next, add all of the other ingredients and stir. Stir every 2(ish) minutes for 7-8 minutes, or until the mushrooms are cooked and the water and soy sauce have almost fully boiled off.
  3. Turn the heat off, place in steamed buns, and top with toppings of your choice (I really like carrot, green onion, cucumber, and red pepper flakes). Enjoy!
