Piña Colada Chia Pudding (VEGAN)

The perfect tropical, light, and refreshing breakfast or dessert!

During 2020, I ate oatmeal/porridge for breakfast almost every single day. That got boring pretty quick, but I couldn’t think of another breakfast option that was as convenient. That is, until I discovered the world of chia pudding! So far I’ve only tried a couple of different flavor combos and this one is the best for sure! So refreshing, flavorful, and easy to make!

I like my chia pudding like I like my smoothie bowls: thick! I leave mine to thicken overnight, but if you prefer yours thinner or you don’t have time, you can feel free to leave it for as little as half an hour. Also, feel free to take this base recipe and spice it up with whatever toppings you enjoy. I could make a different chia pudding flavor combo every day and never run out of new ideas.

Piña Colada Chia Pudding (VEGAN)

The perfect tropical, light, and refreshing breakfast or dessert!

Prep Time: 3 mins – Fridge Time: 30 mins+ – Yield: 2 servings

Ingredients:

– 1 1/4 cups plant based milk (coconut milk if available, but other milks work as well if not)

– 6 tbsp chia seeds

– 1 tbsp maple syrup

– 1 dash vanilla extract

– pineapple (fresh or frozen) to taste; for topping

– dried/shredded coconut to taste; for topping

Instructions:

  1. In a container or jar, add the milk, chia seeds, maple syrup, and vanilla extract and stir until combined.
  2. Place in the refrigerator for at least 30 mins, but I prefer mine really thick so I let it sit overnight.
  3. If you can, shake or stir your jar/container every 30 mins -1 hr so that the chia seeds don’t sink to the bottom.
  4. Once your pudding is done, top with pineapple, coconut, and any other topping of choice.
  5. Enjoy!
