Homemade Vegan Sourdough Stuffing

The perfect holiday side dish full of delicious herbs, butter 😉, crisp sourdough bread, and garlic!

Stuffing has been such a staple for the holiday season in my family, but we always used to just use the mix that came in a bag from the supermarket. This year, I decided to level up our stuffing my making it from a fresh loaf of bread and fresh spices! Plus, I wanted to make it extra fun by using sourdough bread (and wow that really gave it an incredible flavor and complexity)!

Stuffing definitely isn’t a superfood by any stretch of the imagination, but I can say that it is so delicious and makes me so happy, so despite the copious amounts of butter that go into the recipe, I’m not going to keep myself from eating this traditional and delicious holiday side dish! You can, of course, just use a regular loaf of bread if you’re not a fan of sourdough. But, I do suggest giving the sourdough a go because it really elevates the flavors of this dish!

Homemade Vegan Sourdough Stuffing

The perfect holiday side dish full of delicious herbs, butter 😉, crisp sourdough bread, and garlic!

Prep Time: 10 mins – Cook Time: 40 mins – Yield: ~5-7 servings (3 cups)

Ingredients:

– 1 loaf fresh sourdough bread

– 1 sprig fresh thyme; leaves removed and minced

– 1 sprig fresh rosemary; leaves removed and minced

– 1 spring fresh sage; leaves removed and minced

– 1 cup vegan butter

– 1 tbsp vegetable oil

– 1 tsp salt

– 5 cloves of garlic; minced

– 1/2 of a medium yellow onion; chopped

– 2 stalks of celery; chopped into ~1/4 inch slices

Instructions:

  1. Preheat your oven to 325°
  2. Chop your loaf of sourdough into cubes that are around 1/2″-3/4″ and place on a baking tray (make sure none are stacked on top of one another).
  3. Place in the oven and let cook for 10-15 minutes or until the bread pieces are dried and crispy all the way through and are starting to brown (if the bread pieces are still not dry after 20 mins, feel free to broil them for 2-3 minutes)
  4. When the bread is done, remove from the oven and set the oven temperature up to 375°.
  5. Then add the oil, herbs, salt, garlic, onion, and celery to a large pot/sauce pan on medium heat.
  6. Allow that to cook (while stirring occasionally) for 7-10 minutes or until aromatic and the veggies are soft.
  7. Then, turn the heat down to medium-low and add the butter. Allow the butter to melt completely.
  8. Then, add the bread pieces and stir until all the pieces have soaked up butter. If the pieces are still dry, add more butter until they are all covered.
  9. Now, turn the burner off and transfer the mixture to a baking pan (not a tray, this pan should be 2-3″ tall) and place in the oven.
  10. Cook at 375° for 10 minutes and then raise the heat to a broil and cook for an additional 2-5 minutes or until the top of the stuffing is browned.
  11. Then, remove from the oven and enjoy!
