
Bright, light, and refreshing breakfast, dessert, or afternoon pick-me-up for the spring and summer months!
Prep Time: 5 mins – Rest/Set Time: 1 hr – Yield: 1-2 servings
Ingredients:
(pudding)
– 1/3 cup chia seeds
– 1 cup plant milk
– 1 tsp grated fresh ginger
– 1 tbsp chopped mint
– juice of 1/2 a lime
– 1 tbsp maple syrup (optional)
(toppings)
– handful of fresh raspeberries
– handful of fresh sliced strawberries
– sprinkle of slivered almonds
– fresh mint leaves
– drizzle of maple syrup
Instructions:
- Add all of the “pudding” ingredients to a container and mix.
- Close the container and place it in the refrigerator for at least one hour (up to overnight) to allow it to thicken.
- Remove from the fridge and add desired toppings.
- Serve and enjoy!
