Garlic-Rosemary Puff Pastry Wrapped Asparagus Appetizer

The title might be a mouthful, but these are perfectly appetizer sized! The perfect finger food for any and all get togethers and potlucks!

After seeing everyone making vegan pigs in a blanket over the holidays, I was tempted to come up with another fun version that would be tasty AND get some veggies in. So, I did some Pinterest scouring and saw some people making them with asparagus. I decided to make my own spin on them and here we are, with an incredible asparagus in a blanket recipe!

I’m sure you could make these work with any veg of choice and also any flavors/spices of choice. I decided to go with the classic garlic and rosemary combo since I was making these for Christmas, but you can feel free to customize these however you’d like!

Garlic-Rosemary Puff Pastry Wrapped Asparagus Appetizer

The perfect finger food for any and all get togethers and potlucks!

Prep Time: 10 mins – Cook Time: 15 mins – Yield: 20 pieces

Ingredients:

– 20 stalks of asparagus (bottom 1″ cut off)

– 1 sheet of puff pastry

– 4 cloves of garlic; minced

– 1 sprig of fresh rosemary; finely minced OR 1 tbsp dried rosemary

– 1 tsp sea salt

– pinch of ground pepper

– 1 tsp garlic powder

– 2 tbsp olive oil

Instructions:

  1. Preheat your oven to 400°.
  2. Unravel your sheet of puff pastry and slice it into 20 strips that are approximately 1/4″ wide.
  3. Take a stalk of asparagus and wrap a strip of puff pastry around it in a spiral pattern. If the piece of puff pastry is too long, simply cut the remaining part of the strip off and set to the side. Do this to all stalks of asparagus.
  4. Now, place all wrapped asparagus pieces onto a baking sheet (make sure they aren’t touching one another).
  5. Brush each asparagus with a little bit of olive oil and sprinkle each asparagus with salt, pepper, garlic powder, minced garlic, and rosemary.
  6. Once all pieces are covered, place in the oven for 12-15 minutes, or until the asparagus is soft and the puff pastry is golden brown (feel free to broil them for 2-3 minutes if the puff pastry isn’t as browned as you desire).
  7. Remove from the oven and serve! Enjoy!
