Nutritious, delicious, and garlicky side dish for all of your holiday get-togethers!
Brussel sprouts are an integral part of the holiday season in my household, and are always a hit friends and family! This is a vegan-ized version of a recipe from my mother, who would always make these brussel sprouts (with bacon and parmesan too) on Thanksgiving. Now that I’m the main chef in the house, it is my duty to make this scrumptious side dish!
Many people roast their brussel sprouts in the oven, which is great, but I prefer this pan-roasted method that is both quicker and saves you oven space (I know my oven is jam packed to the brim with pies, potatoes, stuffing, etc. on the holidays)! I also topped mine with some vegan cheese and pomegranite seeds so emulate the white and red pops of color that the bacon and parmesan used to provide before I vegan-ized this recipe. They’re totally optional, but if you like the taste and aesthetically pleasing pop of color, I highly suggest adding them!

Easy and Delicious Pan Roasted Garlic Brussel Sprouts
Easy, delicious, and nutritious holiday side-dish packed with flavor!
Prep Time: 7 mins – Cook Time: 15 mins – Yield: 5-7 portions (as a side dish)
Ingredients:
– 1 stalk of brussel sprouts (or approx. 30 brussel sprouts)
– 1.5 tbsp vegetable oil or olive oil
– 1 tsp salt
– 4 cloves of garlic; minced
– 2″ sprig of rosemary; leaves removed and minced
– crack of black pepper (to-taste)
Instructions:
- Remove brussel sprouts from the stalk (use a twisting motion) and use a knife to cut of any of the remaining stalk that’s still on the brussel sprouts. Then, cut the brussel sprouts down the center perpendicular to the bottom edge.
- In a pan on medium heat, add the oil, garlic, and rosemary. Cook for 3-4 mins.
- Next, add the brussel sprout halves, salt, and pepper to the pan. Stir.
- Cook for 10-15 mins (or until the brussel sprouts are softened and browned to your liking).
- Remove from the heat, top with cheese and/or pomegranate seeds (optional) and enjoy!
