Simple yet delicious, high-protein plant-based breakfast that pairs perfectly with some classic avocado toast!
Jumping into the new year, one of my biggest goals was to eat more protein! I’ve started doing more lifting and training in the gym and, as a gymnast, I need to be strong. So, I needed to start eating more protein (not overdoing it, but just actually eating as much as I need) and one of my favorite ways to make sure I was reaching those goals was to be sure that my day started out with a high-protein breakfast! Of course a protein smoothie is the easiest and fastest way to have a high-protein breakfast, but those aren’t always my favorite during the cold winters here in Colorado. So, I decided to finally give tofu scramble a try and wow, now I am obsessed!
What’s great about tofu scramble, is its versatility! I can have it with avocado toast or fruit or a smoothie or hash browns or vegan sausages, the list is endless!

Easy Vegan Tofu Scramble
Simple yet delicious, high-protein plant-based breakfast that pairs perfectly with some classic avocado toast!
Prep Time: 2 mins – Cook Time: 10 mins – Yield: 1 (large-ish) serving
Ingredients:
– 1/3 of a block of firm tofu (~2″x4″)
– 1/4 tsp salt
– 1/4 tsp garlic powder
– crack of black pepper
– 1/2 tbsp nutritional yeast
– 1/4 tsp paprika (optional)
– 1 tbsp vegetable oil
Instructions:
- Take your block of tofu and wrap it in a paper towel or tea towel and press down on either side of the block to try to get as much moisture out of the tofu as possible (this will help it crisp up more).
- Add the oil to a pan on medium heat and crumble the tofu into the pan.
- Add all of the spices and nutritional yeast to the tofu and mix with a spatula.
- Cook for 8-10 minutes (less time if you like it more creamy/moist and more time if you want it more crispy), using the spatula to stir every 2-3 mins.
- Remove from the heat once done cooking and enjoy!
