Easy Vegan Greens and Tempeh Sandwich

The BEST easy and quick lunch to fill you up with healthy greens and protein!

Sandwiches are undoubtedly the most classic lunch ever, but they usually consist of cheese and meat which isn’t the best for us plant-based eaters. So, I came up with this vegan sandwich that hits all the marks: healthy fats (from hummus and avocado), carbohydrates (from the bread), protein (from the tempeh and hummus), and veggies (cucumber and spinach)! What more could you ask for?

Now this is my lunch any day when I don’t just chow down on leftovers, and I have never and will never get sick of it, it’s just such a well-rounded and delicious lunch (even more so with a side of fruit, I love some berries). Plus, how could you not love yummy ingredients on (vegan) buttery bread?

This sandwich is:

– super simple, only a few ingredients needed

– quick to make

– full of healthy fats and veggies

– and fills me up every time!


Easy Vegan Greens and Tempeh Sandwich!

Your soon-to-be favorite lunch for on the go!

Prep Time: 5 mins – Cook Time: 12 mins – Yield: 1 sandwich; 1 serving

Ingredients:

– 2 slices of bread

– 1 tbsp vegetable oil

– 1 serving of tempeh; I used 6 slices about 1/4″ thick

– 1/2 avocado; mashed

– 5-6 slices of cucumber (however many fit your slice of bread)

– 2 tbsp hummus

– pinches of salt and pepper

– 1/4 cup spinach leaves

Instructions:

  1. In a pan on medium heat, add your oil and tempeh slices.
  2. Cook for 3-5 mins (or until bottoms of the tempeh slices begin to brown), then flip the tempeh. Cook for another 3-5 mins.
  3. While that’s cooking, to one slice of bread add hummus, avocado, salt, pepper, and cucumber slices.
  4. Once the tempeh is finished, add the tempeh to that slice of bread too.
  5. Then, put the other slice of bread on top to close the sandwich and place the sandwich into the pan (the pan should still have some oil in it to make the bread nice and crispy, if it doesn’t you can add more oil or some butter).
  6. Cook until the bread is browned to you liking, flip and repeat. Remove from the heat and enjoy!
