
Crispy, nutrient packed, and scrumptious bite-sized goodness!
Prep Time: 10 mins – Cook Time: 10 mins – Yield: ~15 pcs
Ingredients:
– 1 very large sweet potato
– 1 1/2 cups kale; very finely chopped
– 4 cloves garlic; minced
– 1/4 cup cilantro; finely chopped
– 1/2 cup flour
– 1 tbsp olive oil
– 1 tbsp lemon juice
Instructions:
- Shred/grate your sweet potato. Then, squeeze out as much moisture/water as possible. You should have approximately 3 cups of sweet potato.
- Add the sweet potato and all of the rest of the ingredients to a large bowl and mix until combined.
- Form the mixture into small balls/round patties and place onto a frying pan that is on medium-high heat and is lightly coated with vegetable oil.
- Let the bites cook for 3-5 mins on each side, or until browned and crispy.
- Then, remove from the heat, place on a paper towel (to remove some of the excess oil), serve and enjoy!
