The most perfectly comforting and cozy recipe for when the winter weather rolls in!
As someone who loves things like oatmeal, risotto, and other cozy grains, I knew that I needed to try making corn grits (a.k.a. polenta)! With just a couple simple ingredients and frequent stirring, I was able to whip up this amazing dish. Polenta is a great vessel for cheese, roasted veggies, or whatever protein your heart desires.

Creamy Dairy-Free Thyme Polenta/Grits

Prep Time: 2 mins – Cook Time: 45 mins – Yield: ~3 cups of polenta
Ingredients:
– 1/4 cup vegan butter*
– 3/4 tsp fresh chopped thyme**
– 4 cloves of garlic; minced
– 1 cup dairy-free milk (I used unsweetened soy milk)
– 4 cups vegetable broth
– 1 tsp salt
– 1 cup corn grits/corn meal/polenta
– 2 tbsp red pepper flakes (optional; adds a nice bit of heat)
Instructions:
- To a large pot on medium-high heat, add the thyme, butter, and garlic.
- Stir occasionally until fragrant (~5 mins).
- Then, lower the heat to medium-low and add the broth, milk, salt, and corn meal.
- Place the lid on the pot and bring to a boil.
- Once boiling, decrease the temperature to low and remove the lid.
- Stir every 5-7 mins for 30-40 minutes, or until almost all of the liquid has been soaked up by the corn meal.
- Then, if you are going to add pepper flakes, do that now.
- Then, serve will any toppings you’d like! I suggest roasted veggies and dairy free cheese, but your options are endless.

* you can use vegetable oil if you don’t have vegan butter
** you can use dried thyme, but fresh is suggested
