Colorful Vegan Salad with Peanut Dressing

Nutrient-packed salad with a creamy and dreamy dressing!

Since the start of 2021, when I made “eating more salads” one of my new years resolutions, I’ve been playing around with new veggies and dressings in order to find the perfect recipe. Fortunately for the both of us, I found it!!

I’ve always been VERY picky when it comes to salad dressings. I only like dressings that are super creamy and flavorful, simple oil and vinegar does not cut it for these picky tastebuds. When I’m lazy, I love a big drizzle of tahini on some lettuce, but when I want something different (especially if I’m pairing this with Thai, Japanese, or Chinese food) this is the salad that I go for!

This salad:

– is colorful (I counted 5 different colors!),

– has super creamy and tangy dressing,

– works perfectly as a side salad or a main meal (with some crispy tofu on top),

– and is customizable to the veggies you have lying around!


Colorful Vegan Salad with Peanut Dressing

Nutrient-packed salad with a creamy and dreamy dressing!

Prep Time: 10 mins – Yield: ~2 servings

Ingredients (salad):

– 1 cup shredded cabbage and carrot mix

– 1 cup chopped lettuce

– 1/2 cup chopped purple cabbage

– 1/2 cup sliced cucumber

– 1/2 cup chopped red bell pepper

– 1/4 cup sliced carrots

– sprinkle of sesame seeds for topping (optional)

Ingredients (dressing):

– 1/4 cup smooth peanut butter

– 1/4 tsp toasted sesame oil

– 2 tbsp rice vinegar*

– 1 tbsp lime juice

– 1 tbsp soy sauce

– 1 tbsp water

Instructions:

  1. Add all of the veggies to a large bowl.
  2. In a small bowl, whisk together all of the dressing ingredients until thoroughly combined.
  3. Add the dressing to the large bowl and toss until all of the veggies are evenly coated.
  4. Place in serving bowls, top with sesame seeds, and enjoy!

* white vinegar works if rice vinegar is unavailable
