The best on-the-go vegan breakfast with so much depth and flavor and easy to make!
This combo is such a must-try! I’d never heard of a combo of chai and maca, but let me tell you they complement each other so perfectly! I used to eat these every morning during the summer when I had to head out to work at the crack of dawn. I’d just make these on Sunday night and have one or two bars in the car every morning (they stay good in the fridge for about 5-6 days).
Maca powder, if you’ve never tried it before, has a salted-caramel type of flavor that is super rich and delicious (also tasted incredible in smoothies/smoothie bowls)! And since I have a cinnamon obsession (I literally cover everything in it), chai is one of my favorite flavors! I really love the “Bengal Spice” chai from Celestial Seasonings, but any chai that you like will work. Trust me, this combo is killer!

Vegan Chai-Maca Oat Breakfast Bars
The best on-the-go breakfast for chai lovers!
Prep Time: 10 mins – Cook Time: 30 mins – Yield: 10 bars (~5-10 servings)
Ingredients:
– 2 cups rolled oats
– 1 cup instant oats
– 3 overripe bananas
– 4 tbsp maple syrup
– 3 tbsp maca powder
– 1 pinch of salt
– 1 chai tea bag
– 1 tsp vanilla extract
– fillings of choice, I used:
– 1/2 cup raisins
– 1/2 cup walnuts
– 1/4 cup sunflower seeds
Instructions:
- Preheat the oven to 400°.
- Mash bananas thoroughly in a large bowl.
- To the bowl, add tea (cut open the tea bag and use what’s inside), maca powder, salt, and maple syrup. Mix until everything is well incorporated.
- Then, add your rolled and instant oats as well as your fillings of choice. Mix well.
- Add mixture to a greased baking pan and bake for 25-30 mins, or until you can press down on the bars and they are firm and browned on the top and edges.
- Let cool for 5-10 mins, slice, remove from the pan, and enjoy (hot or chilled) with your morning coffee!
