Ginger, Lime, and Mint Chia Pudding (vegan, dairy free, gluten free)

Bright, light, and refreshing breakfast, dessert, or afternoon pick-me-up for the spring and summer months!

Prep Time: 5 mins – Rest/Set Time: 1 hr – Yield: 1-2 servings

Ingredients:

(pudding)

– 1/3 cup chia seeds

– 1 cup plant milk

– 1 tsp grated fresh ginger

– 1 tbsp chopped mint

– juice of 1/2 a lime

– 1 tbsp maple syrup (optional)

(toppings)

– handful of fresh raspeberries

– handful of fresh sliced strawberries

– sprinkle of slivered almonds

– fresh mint leaves

– drizzle of maple syrup

Instructions:

  1. Add all of the “pudding” ingredients to a container and mix.
  2. Close the container and place it in the refrigerator for at least one hour (up to overnight) to allow it to thicken.
  3. Remove from the fridge and add desired toppings.
  4. Serve and enjoy!
