Vegan Lemon and Poppy Seed Mini Crepes w/ Strawberry Sauce

Cute, zesty, and delicious breakfast crepes!

Prep Time: 5 mins – Cook Time: 10 mins – Yield: 10-12 mini crepes

Don’t get me wrong, I do love a good fluffy pancake. But, thin and light crepes really are the best! When I was brainstorming flavor ideas for these crepes, I knew I wanted a very subtle and bright flavor. What’s subtle and bright? Lemon! And of course, what is lemon without poppy seeds? To make these crepes even more special, I had to come up with a sauce to add more flavor, sweetness, and moisture. Strawberry and lemon is one of my all time favorite flavor combos, so strawberry sauce it was!

I love sharing my thought process and the thinking that goes behind each and every recipe. But, I’m sure you want to get some crepes in your belly ASAP! So, here’s the recipe:

Ingredients:

(crepe batter)

– 1 cup all purpose flour

– 2 tbsp sugar

– pinch of salt

– 1 1/2 cups plant milk

– 4 tbsp vegetable oil

– juice of 1 lemon

– zest of 1 lemon

– 1 tsp poppy seeds

(strawberry sauce)

– 1 cup strawberries (fresh or frozen)

– 1 tbsp sugar

Instructions:

  1. To a large bowl, add all of the crepe batter ingredients.
  2. Then, whisk the ingredients together for a few minutes until there are no lumps. Crepes are very thin, so any lumps will be very noticeable.
  3. Next, do a consistency check. If your batter is similar to pancake batter, it is too thick (add more milk). If your batter is extremely watery, it is too thin (add more flour). You want the consistency to be between pancake batter and water.
  4. Now, add some batter (around 2 tbsp-1/4 cup) to a pan (either non-stick or lightly greased) on medium heat. Use the back of a spoon to distribute the batter into a 4 or 5 inch circle.
  5. Cook each crepe for about 2-3 mins on each side (or until browned and flipable).
  6. While the crepes are cooking, add the strawberries and sugar to a small pot on medium heat.
  7. Allow the strawberries to cook down, and turn the heat down once they’ve softened and released most of their moisture.
  8. Then, with a potato masher, mash the strawberries until they form a sauce. Keep the sauce on low heat until you’re ready to serve the crepes.
  9. Once the crepes and sauce are both done, remove the pot and pan from the heat and serve.
  10. Enjoy!
