Plant-based chocolate loaf at the perfect crossroads between fudgy and cakey!
If you’re trying to do some fun winter-time baking, but are bored of making banana bread every time, here’s a delicious way to change it up! You can use this recipe to use up over-ripe bananas if you have them. But, what I love about this recipe is that over-ripe bananas aren’t necessary! I had both an over-ripe banana and some old apple sauce, and I was able to use both in this recipe. This recipe allows for you to use mashed banana and/or apple sauce!
This plant-based chocolate loaf:
– is almost completely naturally sweetened,
– doesn’t require a mixer or any fancy baking equipment,
– leaves room for any add-ins or toppings,
– and tastes delicious either fresh out of the oven or refrigerated!

Vegan Dark Chocolate Loaf
Plant-based chocolate loaf at the perfect crossroads between fudgy and cakey!
Prep Time: 8 mins – Cook Time: 45-50 mins – Yield: 1 loaf (~7 slices)
Ingredients:
– 2 cups mashed over-ripe banana or apple sauce
– 1 tbsp apple-cider vinegar
– 2 tsp vanilla extract
– 1/4 cup plant-based milk (I used soy for this recipe)
– 1/3 cup maple syrup
– 1 1/2 cups flour
– 1/2 cup + 2 tbsp dark cocoa powder
– 1/3 cup sugar of choice (add more if you prefer a sweeter loaf)
– 1 tsp baking soda
– 1 tsp baking powder
– 1/2 tsp salt
– 1/2 cup add-ins (like nuts, chocolate chips, chocolate chunks, etc.); optional
Instructions:
1. Preheat your oven to 350° F.
2. In a large bowl, add the mashed banana or apple sauce, vinegar, vanilla extract, milk, and syrup.
3. Stir the wet ingredients together until combined.
4. Then, add the flour, cocoa powder, sugar, baking soda, baking powder, and salt to the large bowl.
5. Mix until combined with the wet ingredients with no lumps.
6. Then, add your add-ins to the batter and fold them in.
7. Now, add your batter to a greased or lined loaf pan.
8. Place the filled loaf pan into the oven for 45-50 mins, or until a tooth-pick comes out clean or with a little bit of batter (if you prefer your loaf a little bit more fudgy/brownie-like).
9. Let cool for 5-10 mins and then remove from the loaf pan and slice. Serve and enjoy!
