Both sustainable and delicious: these cookies utilize your leftover oat milk pulp and taste like pure heaven!
In an effort to live more sustainably, I started making my own oat milk at home. I was loving it until I realized that all of the oat fibers that didn’t go into the milk were going to waste. So, I found a solution that is not only eco-friendly, but soooooo yummy too! These oatmeal-raisin cookies were the perfect answer to my problem!
Oatmeal raisin cookies are super nostalgic for me, and I’m sure they are for those of you who also had those no-sugar health freak parents too! Props to them for making a five year old love oatmeal raisin cookies, and now they’re probably my favorite kind of cookie! They’re so cozy, warm, and perfectly sweet. Follow along with this recipe to make the best oatmeal cookies you’ve ever had, while keeping it plant-based and sustainable!

– and, as always, vegan + dairy free!

Vegan Oatmeal Raisin Cookies
Yummy, easy, and nostalgic!
Prep Time: 10 mins – Cook Time: 14-17 mins – Yield: 8-10 cookies
Ingredients:
– 1 flax egg (1 tbsp ground flaxseed + 3 tbsp water)
– 1/2 cup vegan butter; at room temp
– 1/2 cup brown sugar
– 1/4 cup granulated sugar
– 1 tsp vanilla extract
– 1/2 cup oat milk pulp (mine had nearly all of the moisture removed)
– 1 cup all purpose flour
– 1 1/2 cups rolled oats
– 1/2 – 3/4 cup raisins (depending on your taste)
– 3/4 tsp ground cinnamon
– 1/2 tsp baking soda
– 1/4 tsp salt
Instructions:
- In a small bowl make the flax egg and set aside.
- Preheat your oven to 350°.
- While the flax egg is sitting, add the butter, both sugars, and vanilla extract to a medium bowl and whisk together with a fork until combined.
- Then, add in the oat milk pulp and flax egg and combine.
- In a large bowl, add the flour, oats, raisins, cinnamon, baking soda, and salt and mix.
- Next, add the wet ingredients (from the medium bowl) to the dry ingredients and combine.
- Once combined, form 8-10 uniform balls out of the dough and place at least an inch apart on an oiled or lined baking sheet.
- Place cookies into the oven and bake for 14-17 minutes (they will still be a bit soft/squishy when they first come out of the oven).
- Remove cookies from the oven and let cool for ~10 minutes (here is where they will become more firm and crunchy on the outside).
- Once cooled, serve and enjoy!
