Vegan Gnocchi with Herb and Garlic Butter & Broccoli

Gnocchi is my all time favorite dish for when I’m craving a carby dinner and want something simple and that I know will always hit the spot! I hadn’t made gnocchi for the first time until very recently, and I had absolutely no idea what I was missing! Gnocchi is such a simple food, but sometimes that’s exactly what you need. I’ve made it a couple of times now and have found to truly perfect recipe. You can use this gnocchi base dough and fry these up with any sauce and vegetables you’d like, but this recipe with herb-garlic butter sauce and broccoli just happens to be my favorite way to serve these little pillows of deliciousness!

Vegan Gnocchi with Herb and Garlic Butter & Broccoli

Your new favorite go-to cozy and warming dinner!

Prep Time: 15 mins – Cook Time: 30 mins – Yield: 30 gnocchi

Ingredients:

– 2 medium/large russet potatoes

– 1/3 cup flour of choice (all purpose or semolina works best)

– 2 tbsp water

– 3 tbsp vegan butter

– 4 cloves garlic; minced

– 1 1/2 tsp dried thyme

– 1/2 tsp salt

– 1/2 a head of broccoli (just the florettes)

Instructions:

  1. Cut your potatoes into 1″ pieces and add them to a pot of boiling water. Cook until they are soft (15ish minutes).
  2. Remove the potatoes from the water with a slotted spoon and place them in a medium-large bowl.
  3. Keep the water boiling and add your broccoli. Cook the broccoli for 5 mins, or until it begins to soften, then set it aside for later.
  4. While the broccoli is cooking, mash the potatoes with a fork or potato masher until smooth.
  5. Then, add the flour and water to the potato mixture and mix. If the mixture is the right consistency to be able to form them into balls, leave it be. If it is too sticky, add more flour 1 tbsp at a time. If too dry/crumbly, add more water 1 tbsp at a time.
  6. Now, form your dough into around ~30 gnocchi (just an approximation, the amount will depend on the size of your gnocchi).
  7. Next, add the vegan butter, thyme, garlic, and gnocchi to a pan on medium-high heat. Cook for 4-5 mins, or until the bottom of the gnocchi are golden brown. Flip the gnocchi and let cook for another 4-5 mins.
  8. Add the broccoli, mix, and cook for another 2-3 mins.
  9. Remove from the heat and enjoy!
