Crispy and buttery on the outside, flavorful and moist on the inside!
I wasn’t planning on telling anyone, but this was actually my failed attempt at making samosas 😬! The flavor profile wasn’t exactly right, and I couldn’t figure out how to make the right the shape. But, these turned out even BETTER than samosas! Sometimes your “failures” are best successes (call me a philosopher)!
I’ve been making tons of recipes with puff pastry recently, ever since I realized most brands of puff pastry were vegan, and now I can’t stop! It’s so simple and easy to use, and more fool-proof than I thought. Just look at the back of the packaging and make sure that the “allergens” section does not say “contains milk” or “contains eggs”, and you’re good to go!
These curry puffs are:
– fairly simple to make
– the perfect hand-held party or potluck food
– a great appetizer (or main dish if you add some protein)
– and soooo flavorful!!

Vegan Hand-Held Vegetable Curry Pies
Your favorite go-to flavor packed appetizer!
Prep Time: 7 mins – Cook Time: 30 mins – Yield: 8 puffs
Ingredients:
– 1 packet vegan puff pastry
– 3-4 small yellow potatoes; chopped into small 1/2 inch pieces
– 1 tbsp vegetable oil
– 1/2 onion; chopped
– 4 cloves of garlic; minced
– 1/2 large carrot; chopped into small pieces
– 1/4 cup frozen peas
– 3 tbsp tikka masala spice mix
– 1 tsp salt
– 1 tsp turmeric
– 1 tbsp brown sugar
– 3/4 cup vegetable stock
– 1 tbsp vegan butter
Instructions:
- Preheat the oven to 425°
- To a pan on medium heat, add the oil, garlic, onions, potatoes and carrots. Cook for 5-7 mins (until onions are translucent), stirring occasionally.
- Â Then, add tikka masala powder and turmeric. Stir and cook for 1 min.
- Â Next, add sugar, vegetable stock, and frozen peas and bring to a boil.
- Once boiling, turn the burner onto lowest heat and let simmer until potatoes are soft all the way through (10-15 mins)
- Then, turn off the burner and let the filling cool down a bit.
- Next, you will want to cut your puff pastry into squares about 3-4 inches by 3-4 inches. Add a spoon full of filling to each square, fold corner-to-corner in half to form a triangle, and use a fork to gently press around the edges.
- Then, melt your butter (just a couple seconds in the microwave, or a minute in the oven) and use a food brush (if you don’t have one, your fingers will work just fine) to brush a thin coating of melted butter on the top of each pie (this will help it get super brown and crispy).
- Â Place in the oven for 10 mins (or until light brown; puff pastry burns easily, so be sure to keep a close eye on them).
- Remove once browned, let cool for 2-3 mins, and enjoy! This tastes incredible with mint chutney!
