Easiest Vegan Flatbreads!

The world’s simplest and most delicious vegan flatbreads for the perfect lazy (but healthy) meal!

I came across this recipe on accident, but let me tell you it was one of the best accidents I’ve ever had! I looked up “tortilla recipe” and made what that recipe said, but I accidentally used self-rising flour instead of regular all-purpose flour, oops! But, I was actually amazed by the results: fluffy flatbreads! Who knew they could be made so easily?!

Nowadays I make these ALL THE TIME! They’re perfect for any meal of the day too! You can slather them with peanut butter and bananas, or make avocado and scrambled tofu toast for breakfast. You can add pesto or hummus and roasted vegetables for a simple lunch. And you can make pizza (with this delicious pesto)and garlic bread with them for the perfect Friday night dinner! And you best believe these taste delicious with cinnamon sugar or dipped in melted chocolate for a dreamy dessert too!

Easy and Delicious Vegan Flatbread Recipe

Your go-to base for any meal of the day!

Prep Time: 5 mins – Cook Time: 10 mins – Yield: ~5 flatbreads

Ingredients:

– 2 cups self-rising flour

– water (2 tbsp at a time)

– 2 tbsp olive oil

– pinch of salt

Instructions:

  1. Add flour and salt to a bowl and mix.
  2. Add the olive oil and 2 tbsp of water to the dry ingredients and mix (I suggest mixing with your hands, rather than a utensil)
  3. If the dough is moist and a tiny bit sticky, you’re done making the dough. But, if your dough is still dry, continue adding water and mixing 1-2 tbsp at a time until is is moist and a tiny bit sticky.
  4. Now, cut your ball of dough into 4-6 pieces (amount depends on how big or small you want your flatbreads to be).
  5. On a floured surface, use your hands (or a rolling pin, if you prefer) to roll each piece of dough into a circle(ish) shape about 1/3″ thick.
  6. Now, add the flatbreads to a pan on medium heat (if you want to them to be crispier on the outside, add a little bit of oil or vegan butter to the pan before placing the flatbreads in)
  7. Cook for 3-5 mins, or until the bottom begins to brown. Flip.
  8. Cook for another 3-5 mins, remove from the heat, and enjoy with whatever toppings you’d like (like this pesto for example)!
