I've been trying to come up with fun new hummus flavors lately and when the idea for a spicy thai themed hummus popped in my head, I rolled with it and creating something utterly majestic. Although I've been vegan for nearly two years, this was my first time making seitan at home. Today I present to you an EPIC way to elevate plain seitan. You only need a few ingredients and a hungry tummy for this one! The recipe is up now and can be found by clicking the link in my bio. The seitan is SUPER realistic/similar to the texture of chicken, so if you're missing chicken after going vegan: this sandwich is for you!! Every time I've tried to make vegan mac and cheese from noodles and store-bought vegan cheese shreds, it has failed. The flavor wouldn't be bad, but the texture was not creamy at all. So, I decided to go with a more whole foods based option and it turned out fabulously! The base of this sauce is veggies (potatoes, carrots, and red bell peppers) and its blended up with cashews, spices, and all kinds of other amazing ingredients. After weeks of riding the baked oats wave, I took a step back and realized I needed to change it up a bit. Don't get me wrong, I'll still be eating lots of baked oats and sharing my fun recipes along the way. But, I'll be integrating more fun breakfast ideas like this into the mix as well. This recipe makes one huuuuge single serve breakfast cookies out of chickpeas, almond flour, dates, tahini, and a couple more fun ingredients.
